• Marinade: • zest and juice of 1 orange • juice of ½ lemon • 2 teaspoons sweet chilli sauce • 1 clove garlic, peeled and crushed • 1 tablespoon clear honey • 1 tablespoon olive oil • freshly chopped parsley and fresh orange zest to garnish • 6 salmon fillets
1 Mix together all the ingredients for the marinade and pour into a shallow dish.
2 Place the salmon fillets into the marinade and turn to coat well. Leave to marinate for 2 – 3 hours or overnight.
3 Remove the salmon from the marinade and place in a perforated steam tray. Steam in the Miele steam oven at 90ºC for 5 minutes. Transfer to a warmed serving dish and sprinkle with the chopped fresh parsley and orange zest to garnish. Serve immediately.
