Basic dough recipe for tray-baked cakes and biscuits (quark and oil dough)

200g quark (or similar fresh soft cheese), drained
6 tablespoons (60ml) milk
8 tablespoons (80ml) oil
1 egg
100g sugar
pinch of salt
1 sachet vanilla sugar (approx. 2 teaspoons)
400g flour
20g baking powder
preparation
Combine the quark, oil, sugar, vanilla sugar and salt in a bowl. Mix the flour and the baking powder and stir in half of this mixture, then add the rest and knead until smooth. The dough should not be sticky – add more flour if necessary.
This basic dough can be used to make tray-baked cakes or biscuits. For baking times and instructions see the recipe suggestions, e.g. apricot crumble cake, Danish pastries or apple turnovers. For a savoury topping such as pizza or onion tart, omit the sugar and vanilla sugar.
