Courgette and Tomato Gratin

• 6 medium sized courgettes, trimmed and sliced diagonally into 1 cm rings
• 1 x 284ml carton double cream
• 150g English Goats Milk Cheddar Cheese, grated
• 1 tablespoon cornflour
• 1 x 20g packet fresh basil leaves, roughly shredded
• salt and pepper
• 8 tomatoes, sliced
• 100g fresh breadcrumbs
preparation
1 Set the Miele combi oven to preheat on the Fan plus function at 180°C.
2 Using the Miele electric grill or a griddle pan on the hob, char the courgette slices until softened. Set aside.
3 Combine the double cream, shredded basil leaves and half the grated cheese in a small bowl, seasoning with salt and freshly ground black pepper.
4 Arrange half the courgettes in the base of a 1.5 litre shallow ovenproof dish, then layer in half the tomato slices. Pour the cream mixture over the top. Continue the layers with the remaining courgette and tomato slices.
5 Mix together the rest of the cheese with the breadcrumbs and complete the dish by sprinkling them evenly over the tomatoes.
6 Place in the combination microwave and bake at 180°C/300W for 20 minutes on combination fan and microwave or until the topping is golden brown and the courgettes just tender. Or alternatively, bake on fan only at 180°C for 40 minutes.
