Hollandaise sauce
ingredients
Serves 4–6
175g butter
2 egg yolks
2 tablespoons water
1 teaspoon lemon juice
cayenne pepper
salt and white pepper

preparation
1. Melt the butter in an open dish in the microwave oven (450 W) for about a minute. In a covered bowl, heat the water in the microwave (600 W) for about a minute.
2. Add the egg yolks to the water and whisk with a balloon whisk until frothy. Add the melted butter, stirring continuously.
3. Cover the sauce and cook in the microwave (150 W) for approx. 4 minutes, occasionally giving it a good whisk. Season with salt, pepper, cayenne pepper and lemon juice. The sauce mustn’t be allowed to boil up again as this will make it curdle.
Hollandaise sauce goes well with delicate vegetables or steamed fish.
