Poisson Braisé avec de l'Avocat

2 sea breams approx 300 g each
100 ml oil
100 ml vinegar
butter
oil
3 onions
2 shallots
5 tomatoes
2 chilli peppers
3 cloves of garlic
1 bunch of chives
1 tbs mustard
pepper, salt
1 avocado
parsley

preparation
Using a sharp knife, cut several slits into the sea breams on both sides. Place in a marinade made of 100 ml oil and 100 ml vinegar for 3 hours.

Coat the fish with butter or oil and place on a baking tray. Cook for 45-60 min in the preheated oven at 200°C top/bottom heat, basting several times.

While the fish is cooking, finely chop the onions, shallots, tomatoes, chilli peppers, cloves of garlic and chives. Mix with 100 ml oil, 100 ml vinegar, mustard and a little pepper. Arrange in a bowl.
Cut 1 avocado in 8 pieces, arrange on plates and decorate with the prepared vegetables. Add the fish and garnish with parsley, slices of onion (or shallots) and tomatoes.
